La textura instrumental predice la preferencia del consumidor en masmelos
Afirmación
En masmelos con isomaltulosa, la regresión PLS2 mostró buena correlación entre la textura instrumental (TPA) y los atributos sensoriales, y la textura fue el atributo más ligado a la intención de compra. La predicción tiene límites: la dureza sensorial no correlacionó con la instrumental, el panel (20 jueces) no encontró diferencias significativas entre muestras y un estudio posterior del mismo grupo concluye que el panel sigue siendo imprescindible.
