Sin gelatina el masmelo pierde humedad más rápido y la pectina es la más sensible al calor

En zefir envasado en polipropileno, el de gelatina perdió 1,2 % de humedad en 10 semanas a 18 °C, frente a 2,5 % el de pectina y 3,5 % el de agar. Al subir a 28 °C, la migración de humedad se multiplicó por 3,0 con pectina, por 2,7 con agar y solo por 1,5 con gelatina.
